Kids Breakfast:
Polenta with queso and/or Dubliner Cheddar
Peanut butter toast and banana smoothie
Pancakes
Breakfast tacos with eggs, avocado, and/or leftover Mexican Beef
Pan granola yogurt parfaits
Toast with coconut milk, banana, strawberry and protein powder smoothie
Lunch
My Lunch:
Crockpot Minestrone with spare ribs, chickpeas, lentils, and fresh green beans (leftover)
Mexican Beef (leftover) with arugula, baby spinach, black beans and corn, red peppers, cilantro lime mayonnaise dressing
Mustard and Caper Roasted Tilapia baked over baby red potatoes (leftover), red and green cabbage sauteed in olive oil
Mustard and Caper Roasted Tilapia baked over baby red potatoes (leftover), arugula and red pepper salad with leftover sauce from the fish as the dressing
Ground Beef and Chorizo Sausage burgers on portobello mushrooms with a balsamic blue cheese sauce and homemade mayonnaise (leftover), roasted carrots
Butternut Bisque, Mexican Beef and fresh avocado (all leftover)
Mediterranean Salad from Aubergine
Salmon patties on a bed of baby spinach dressed with balsamic and olive oil, 1/2 and avocado
Kids Lunch:
Crockpot Minestrone for some and grilled cheese for others
The three oldest are back to school lunch so far this week. 🙁 I need more good and easy ideas
Two smaller have had tacos consisting of sour cream, red pepper, queso, lime and cilantro for one and egg, sour cream, and queso for the other
Leftovers of Mexican beef and Chorizo burgers

Handful of raw almonds and walnuts with a small square of 85% chocolate
1 small piece cookie dough
Banana with almond butter
Dinner
Pressure Cooker Mexican Beef, sweet corn and black beans with cilantro dressing, baby arugula and fresh spinach, red peppers, queso, sour cream, corn or flour tortillas for people who wanted them, chips and salsa and Raspberry Ricotta Cake (my fabulous Step-Mom Gigi made it and it was not too sweet and just heavenly)
Mustard and Caper Roasted Tilapia baked over baby red potatoes -inspired by this recipe from Ina Garten, fresh red and green cabbage slaw, low sugar oatmeal chocolate chip cookies
Frittata with goat cheese, artichoke heart and red pepper, pan roasted brussels sprouts (The Frittata was good, but not fabulous) the artichoke hearts turn the eggs a funny color, but still taste good
Ground Beef and Chorizo Sausage burgers on portobello mushrooms with a balsamic blue cheese sauce and homemade mayonaise, or on a slider bun with regular toppings. Roasted broccoli, and pan fried eggplant on the side
Butternut Bisque with organic sourdough
Rotisserie Chicken, roasted sweet potato rounds with olive oil and seasoning salt, pickled beans, baby spinach
