I created this recipe for a chili cookoff a few years back. It didn’t win (who were those judges anway?? ;)), but it has since become a go to dinner for me especially when I need to feed a crowd or bring a meal to a neighbor. It comes together pretty quickly and I usually have the ingredients in my pantry/fridge.
It’s good on its own, but it’s also good with toppings such as: cheese, sour cream, fresh cilantro, lime, corn chips, and avocado. I just use what I have.
