Aebleskivers

This recipe is something we’ve made in the past, but only recently added to our regular rotation, primarily because you have to have special pans. We finally borrowed the pans (permanently) from Spencer’s dad and invited him over for aebleskivers anytime he’s in the mood.

They are sort of spherical puff pancakes from Scandinavia. We have Danish and Swedish ancestry and feel connected to our ancestors when we imagine them eating these yummy golden balls that we have come to love so much.

You can make them plain and eat them with all kinds of toppings or stuff them while partially cooked with fruit, meat, chocolate, or cheese.
