Dutch Baby aka German Pancake

This one is an old family favorite. With the ingredients pretty much always on hand, we’ve had it for many a regular breakfast, to the point that some of our kids moaned and groaned when they heard the morning menu. So we’ve laid off a bit and only make it for everyone when we have a special reason, like delicious fresh fruit. (German Pancake with fresh mango or nectarines and whipped cream is pretty amazing…) Done right and it is like a warm cream puff with fresh fruit.
- 3 Tbsp butter
- 1 cup milk
- 9-10 large eggs
- 1 cup flour
- 1 tsp salt

Preheat oven to 400º

Place butter in bottom of glass 9×13? baking dish to melt and brown (works better if you cut it in to smaller chunks)

Mix dry ingredients, mix wet ingredients, combine and mix briskly for 30 seconds

You don’t want lumps, but some little ones are okay. Ideally, you’ll let this mixture stand for 5-10 mins while the butter browns

When the butter looks good, poor the entire mixture in to the pan and return to the oven

Bake until hugely puffy and golden brown
